Sweet potatoes are delicious anytime you are roasting a turkey or chicken, but with everything else you have to do, how will you find the time? This easy recipe will fill out your Thanksgiving or Christmas menu and allow you to have plenty of time for other things.

Difficulty: Easy
Instructions

Things You'll Need:

  • 1 large can sweet potatoes
  • ½ cup brown sugar
  • ½ tsp. cinnamon
  • 1 bag small marshmallows
  1. Step 1

Open the can of sweet potatoes and drain off all the liquid.

  2. Step 2

Pour the sweet potatoes into a 9-by-12 inch baking dish.

  3. Step 3

Sprinkle the brown sugar and cinnamon over the sweet potatoes. Cover with foil and set aside until it's time to bake.

  4. Step 4

Put the sweet potatoes in the oven half an hour before you plan to eat. The oven should be preheated to at least 350 degrees. (The casserole can cook at whatever temperature you have the oven at for your chicken or turkey.)

  5. Step 5

After you take your chicken or turkey out of the oven, turn the temperature up to 400 degrees. Uncover the sweet potatoes and pour the marshmallows evenly over the top. Put the casserole back into the oven on a top rack for about 3 minutes. The casserole is done when the marshmallows are slightly melted and golden brown on top.

Tips & Warnings
  • The casserole can be browning while you are cutting your turkey or chicken.
  • This recipe is for up to 8 people. If you have more than 8 people use a deep (4 quart) casserole dish and double everything except the marshmallows.

  • There will be a lot of syrup in the casserole when it's done so be careful not to tip the casserole dish when you take it out of the oven.
