How to Make Fudge Pie With a Walnut Crust

Walnuts are very good for you, as is a moderate amount of chocolate. Have a slice of this pie with a glass of red wine once in a while for a tasty injection of antioxidants into your diet. And even if this pie is not exactly health food, it's still delicious.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 6 oz. walnut halves or pieces
  • 3 tbsp. butter, softened
  • 2 tbsp. sugar
  • Food processor, or food grinder or chopper
  • Medium mixing bowl
  • Rubber spatula
  • 9-inch pie plate (preferably glass)
  • 3 oz. (3 squares) unsweetened baking chocolate
  • 4 oz. (1 stick) butter
  • 1¼ cup sugar
  • ¼ cup flour
  • Pinch salt
  • ¼ tsp. vanilla
  • 3 large eggs
  • Microwave
  • Microwave-safe medium bowl and small bowl

Make the Walnut Crust

Step1
Grind the walnuts coarsely in a food processor or chopper. Scrape the walnuts out using a rubber spatula and put them in a medium-sized bowl.
Step2
Mix the sugar into the walnuts. Cream the butter gently into the walnut/sugar mixture until crumbly.
Step3
Pat the walnut mixture gently on the bottom and up the sides of a 9" pie plate. Bake the crust at 325 degrees for 10 minutes or until lightly browned. Let cool.

Make the Fudge Pie

Step1
Melt the chocolate and the butter together in a medium microwave-save bowl by microwaving on HIGH for 1 minute. Stir, then microwave for additional 15-second increments if needed. When the chocolate and butter are melted, stir them until they are well blended.
Step2
Stir the sugar into the chocolate mixture. Add the flour and salt, then stir in the vanilla.
Step3
Beat the eggs in a small bowl until the yolks and whites are blended. Fold the eggs into the chocolate batter.
Step4
Scrape the batter into the walnut crust with a rubber spatula. Bake the pie at 350 degrees for 20 minutes, then check to see if the center is set. If not set yet, continue baking for another 5 to 10 minutes.

Tips & Warnings

  • You may substitute pecans for walnuts if you like, although you might not get the full antioxidant benefit.
  • The crust can be prepared ahead of time, and frozen either before or after baking.
  • The pie itself also freezes well after baking.
  • Be careful that the chocolate doesn't burn when you're melting it.
