How to Make Sweet Potato Puff

This, in my opinion, is the best recipe for sweet potato pie. Easy to make, easy to eat! It's practically a dessert dish!

Instructions

Things You'll Need:

  • 4-5 medium sized sweet potatoes (cooked and mashed)
  • 1/2 cup orange juice
  • 1/2 cup light cream
  • 1 teaspoon vanilla extract
  • 1/2 cup sugar
  • 6 tablespoons butter (melted)
  • 1/2 teaspoon cinnamon
  • 1/2 cup brown sugar
  • 1/3 cup flour
  • 1 bag mini marshmallows (use as needed)
  1. Step 1

    Cook 4-5 medium sized sweet potatoes in pot (they should be very softwhen they are done.) Drain water, remove skins (careful, they will be extremely hot to touch!)

  2. Step 2

    In medium sized mixing bowl, combine sweet potatoes, orange juice, light cream, vanilla, sugar, 3 tablespoons melted butter, and cinnamon; beat until fluffy, pour into baking dish.

  3. Step 3

    Melt remaining 3 tablespoons of butter, place in seperate bowl with brown sugar and flour, mix together. Sprinkle the mixture over sweet potatoes.

  4. Step 4

    Put oven on 350 degrees, place sweet potatoes on middle rack. Bake for 35 minutes. Remove dish, pour mini marshmallows on top, place back in oven and cook until marshmallows are browned. Serves 6.

Tips & Warnings
  • I usually have the sweet potatoes already cooked the night before; that way you won't burn your fingers and/or hands removing the skins if you try it immediately after cooking the potatoes.
