Sweet Potatoes are a traditional side dish for Thanksgiving. If you are looking for an alternative to that standard casserole with the mini marshmallows baked on top, try these Maple Whipped Sweet Potatoes. Once you taste them you will want to make them year round.

Instructions

Things You'll Need:

  • 6 lbs. sweet potatoes
  • 6 cups apple cider
  • 4 cups water
  • 1 stick unsalted butter
  • 2/3 cup maple syrup (the good stuff, not the kind in the squeeze bottle)
  • salt, to taste
  • A large pot
  • A sharp knife
  • A vegetable peeler
  • A stand mixer, hand mixer or food processor
  • A serving dish
  1. Step 1

    Peel the sweet potatoes and cut them into 2 inch chunks.

  2. Step 2

    Place the peeled and cut sweet potatoes into a large pot. Cover with the apple cider and water. Bring to a boil. Reduce heat and simmer 20 to 25 minutes or until the potatoes are fork-tender.

  3. Step 3

    Drain the potatoes and set aside in a large bowl.

  4. Step 4

    In the same pot that you boiled the sweet potatoes in, bring the butter and maple syrup to a boil. Add in the potatoes and toss to coat well. Season with salt, to taste.

  5. Step 5

    With a mixer or food processor, whip the potatoes until smooth. You may need to do this in batches.

  6. Step 6

    Place the whipped sweet potatoes into your serving dish and serve.

Tips & Warnings
  • You can prepare this day a day ahead of time. Simply butter your casserole dish before placing the whipped potatoes in. Cover and refrigerate overnight. To reheat the next day, place the casserole dish into a pre heated 350 degree oven for 30 minutes or until warmed through.
