Gnocchi are a very delicious dish but it takes a bit of effort and time to prepare. So why not make a little more and freeze them for the next time you feel like some? The most common mistake in freezing gnocchi is to place them all together in a bag and place them in the freezer. When you are ready to eat them you will discover they have become one big frozen dumpling.

Difficulty: Easy
Instructions

Things You'll Need:

  • Fresh made gnocchi
  • Cookie sheet
  • Freezer bags
  1. Step 1

Place the gnocchi on a cookies sheet afar just enough so they don’t touch each other.

  2. Step 2

Place the cookie sheet in the freezer for 10 to 15 minutes.

  3. Step 3

Remove all the gnocchi, now just starting to freeze, from the cookie sheet and place them in a freezer safe storage bag.

  4. Step 4

Place the bag in the freezer right away. At this point the gnocchi will not melt together.

  5. Step 5

The day you decide to eat them, just boil some salted water in a pot and drop them while still frozen. When ready they will float. Let them float for about two minutes before taking them out.

  6. Step 6

Drain them with a slotted spoon and place them on a serving dish.

  7. Step 7

Serve hot covered in your favorite sauce.

Tips & Warnings
  • In the freezer they will be good for a month.
  • In Italian the word gnocchi it is a plural term. If you wanted to call just one it would be one gnocco.
  • Do not take gnocchi out of the freezer till you are ready to drop them in the water. They tend to thaw fast and you end up with a bunch of sticky dumplings on your fingers as you try to place them in the water or if you left them in the bag they may start to stick to each other.
