How to Make a Super Crispy Chicken Parmigiana

Everyone always asks me the secret to my chicken parmigiana, and how it comes out so crispy on the outside and tender on the inside. The fact is, it's not really a secret, and when I tell people, they usually slap their forehead!

Instructions

Things You'll Need:

  • 3 eggs, beaten
  • 4 cups Italian breadcrumbs
  • Chicken breast, thinly sliced
  • Spaghetti sauce, homemade or jarred
  • Fresh mozzarella, sliced
  1. Step 1

    Set up your workstation with chicken, egg wash and a plate of breadcrumbs, then take it directly to the frying pan, pre-heated with oil. Somewhere on the side, place a shallow rectangular baking pan. Heat your oven to 350 degrees F.

  2. Step 2

    Before you go throwing the chicken in the pan, be sure to dredge your chicken breast in the egg wash, coat the chicken with bread crumbs, the GO BACK and dredge the chicken breast in the egg wash, give it a second coat of bread crumbs, then drop it directly into the hot oil. Do not let it sit on the plate.

  3. Step 3

    The chicken should be done in a few minutes. Arrange the chicken in the baking pan. Spoon some sauce onto each chicken breast, follow it up with a slice of mozzarella. Pop it into the oven for about 10 minutes.

Tips & Warnings
  • Serve this on top of a plate of penne with some more of that spaghetti sauce you used for the parmigiana.
  • Shred or peel some fresh Asiago cheese and top your meal off right!
  • Always cook chicken thoroughly!
