How to Make the Colonel's Chicken Salad

If your family is anything like mine, when KFC comes home those breast pieces are the last to get eaten. Everyone goes after those small, tender leg and thigh pieces. With this recipe, I make sure I hide the breast pieces so that I can make this great chicken salad!

Instructions

Difficulty: Easy

Things You’ll Need:

  • 3 or 4 KFC breast pieces
  • 1 celery stick
  • a little less than 1/4 of a sweet onion
  • Mayonaisse as desired
  • 1 hardboiled egg
  • Cheddar Cheese Crumbles (pick your fave!)

Step1
Take out a cutting board. Cut up the chicken breast into small pieces and put it into a bowl, skin and all. No need for seasoning--the colonel's secret recipe is all you could ever want.
Step2
Cut your celery stick into small pieces, and finely dice the onion. Coarsely chop your hard boiled egg and put these into the bowl with the chicken. Add a couple of handfuls of cheese crumbles.
Step3
Put a few tablespoons of mayonnaise into the bowl and mix everything together completely. Serve in between two slices of white or wheat bread and you're right as rain!

Tips & Warnings

  • Dress it up by serving it buffet style on a plate over some crisp Romaine Lettuce.
  • Instead of regular sliced bread, serve on a pita with a handful of Sun Chips.
  • Feel free to omit the onion, or the egg, or both. Then use the chicken and celery mixture to make a chicken salad BLT! Mmmm!
