Latkes are a delicious part of the Hanukkah celebration

The celebration of Hanukkah is about the miracle of the oil that should have provided light for only one night lasting for eight nights. To celebrate this miracle, oil is used in many Hanukkah traditions. My favorite tradition is eating latkes, a delicious potato pancake cooked in oil. Hanukkah wouldn't be the same without them. In my family, our tradition was my sister peeling and grating the potatoes, my dad cooking the latkes and me mopping the excess oil from the cooked latkes while they cooled. Here is my father's delicious recipe for latkes.

Difficulty: Moderate
Instructions

Things You'll Need:

  • 2 lbs. potatoes, peeled
  • 1 medium Onion
  • 2 eggs
  • 1/3 cup Matzo Meal
  • 1 tbs. Salt
  • 1/4 tsp. baking powder
  • Vegetable or Canola oil
  • Applesauce
  • Sour Cream
  1. Step 1

    Heat up 1 inch of vegetable or canola oil in frying pan.

  2. Step 2

    Shred potatoes and onion. Squeeze as much water out of potatoes as you can. Add onion.

  3. Step 3

    Add Matzo meal, eggs, salt and baking powder to the onion and potato mixture. Mix together.

  4. Step 4

    Using large spoon, form mixture into patties. Place in hot oil. Let it cook until it turns brown on one side, then flip and repeat on other side.

  5. Step 5

    Remove patties from oil and place on paper-towel lined plates to drain oil. Mop excess oil with more paper towels.

  6. Step 6

    Top with applesauce or sour cream and enjoy!

Tips & Warnings
  • Freeze the onion before peeling and shredding. It will reduce your tears.
  • If you choose to use a food processor to shred the potatoes, the latkes won't taste as good as if you hand shredded them.
