This is a delicious recipe, bringing the word 'pancake' even more into the literal sense! Serves 2 to 3 people, depending on appetite of course!

From Quick Guide: Pancake Recipes
Difficulty: Easy
Instructions

Things You'll Need:

  • Instant Pancake Mix (keep it simple, folks!)
  • 3 to 4 Macintosh Apples, peeled and quartered
  • 1 tsp of cinnamon
  • 1/4 cup of sugar
  • cast iron skillet, buttered and very lightly floured
  1. Step 1

In a bowl, whip up some instant pancake mix, enough for 6 to 8 pancakes. That should work out to about 2 cups of mix, and 1 cup of water. This should ensure that the pancake mix is a little thicker, as it should be, for two reasons--it makes a fluffier pancake, and it'll leave room for the apple's natural juices.

  2. Step 2

In another bowl, mix your quartered apples with the cinnamon and sugar. Stir it until all of the apples are covered, then combine with the pancake mixture. Mix well.

  3. Step 3

Set oven to 350 degrees F. Now pour the apple-pancake mixture into the cast iron skillet (be sure it's buttered and lightly floured!), and into the oven it goes! Bake for approximately 10 to 15 minutes, checking on it frequently after the first 10 minutes.

Tips & Warnings
  • Serve this dish buffet style. Set the skillet directly in the center of the kitchen table (on top of a plate of course!), surrounded by a plate of sausages and bacon, the butter dish, homemade whipped cream, syrup and pitchers of milk and juice.
  • THIS DISH WILL BE HOT. Extremely hot. Be sure to put the skillet on some kind of potholder before placing on the kitchen table, and especially before taking it out of the oven. And if this is something you need reminding of, you probably shouldn't be making this dish anyway.
