If you've never lived in the Middle East, you've probably never heard of bourekas (or borekas) and you are missing out on a delicious treat.

Bourekas are a small pastry closely resembling a turnover, that are usually filled with a potato, cheese, mushroom or minced meat filling.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • Frozen Phyllo or puff pastry dough
  • Filling
  • Beaten Egg
  • Sesame seeds
  1. Step 1

    Make one of the filling recipes listed in the resources section or try your own. Let filling cool.

  2. Step 2

    Thaw sufficient phyllo or puff pastry dough for the amount of filling you have prepared (figure 1 Tbs. per bourekas).

  3. Step 3

    On a lightly floured surface, cut each sheet of dough into 5x5 inch squares (or about 6 squares per sheet).

  4. Step 4

    Beat an egg with 2 tsp. of water until foamy and brush over the edges of each pastry square.

  5. Step 5

    Drop 1 heaping Tbs. of filling into the center of each square and fold into triangles. Crimp the edges of each pastry with a fork.

  6. Step 6

    Brush the tops of the borekas with the remaining egg and sprinkle with sesame seeds. Bake at 350 degrees F (175 degrees C) until puffy and golden brown (about 25 minutes).

  7. Step 7

    Enjoy!

Tips & Warnings
  • There is no limit to the variety of fillings you can use in your bourekas - get creative!
