Autumn and Winter is the perfect time to make this delicious, iron and vitamin C rich meal. Sweet potatoes, spinach and peanut butter will make this a favorite vegetarian recipe!

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 tsp. olive oil
  • 3 tsp. minced garlic
  • 2 red peppers, cut into chunks
  • 1 large onion chopped
  • 1 tbs. chopped fresh ginger
  • 1/2 tsp. ground allspice
  • 1/2 tsp. ground red pepper
  • 6 cups vegetable broth
  • 4 large sweet potatoes peeled and cut into 1 inch chunks
  • 1/2 cup reduced fat peanut butter
  • 1 cup boiling water
  • small can tomato paste
  • 1 lb. frozen spinach

    How to Make Sweet Potato Stew

  1. Step 1

    Heat the oil in soup pot over medium high heat. Add garlic, bell pepper and onion. Cook for a few minutes. Add ginger, allspice and ground red pepper. Cook for 1 minute.

  2. Step 2

    Add broth and sweet potato chunks. Add broth if necessary to cover potatoes. Bring to a boil. Reduce heat and simmer for 20 minutes.

  3. Step 3

    Boil water in a 2-cup glass measuring dish in the microwave. Add peanut butter and whisk until smooth. Add to the soup pot along with the tomato paste and spinach.

  4. Step 4

    Cook for 20 minutes or until heated through and serve.

Tips & Warnings
  • Let this soup simmer for a few hours to really blend the flavors and make the sweet potatoes extra delicious.
  • Make some brown rice on the side to add to soup if desired.
