Eating vegetarian or vegan does not mean you have to stop eating flavorful foods. When prepared properly, tofu can be a delicious substitute for meat. Although any vegetable can be used for a stir-fry, broccoli makes a particularly tasty, nutrition version. Does this Spark an idea?

Things You'll Need

  • 3 1/2-ounce bag boil-in-bag brown rice
  • 1 to 2 cups frozen broccoli
  • 14-ounce package extra-firm tofu, drained
  • Sun-Bird Stir-Fry Seasoning Mix
  • 2 teaspoons soy sauce
  • 2 teaspoons sugar
  • 1/3 cup water
  • 2 teaspoons vegetable oil
  • Frying pan or wok

Instructions

      Boil the brown rice according to the instructions on the package.

      Mix the brown rice and broccoli in a large frying pan or wok.

      While the rice and vegetables sauté, slice the tofu into small squares or rectangles. Add the tofu to the brown rice and broccoli and stir gently.

      Add the seasoning mix to the pan, then add the soy sauce, sugar, water and vegetable oil.

      Mix the ingredients gently every few minutes. Let sauté for 10 minutes or until the broccoli is tender and the tofu has browned.
