While you are doing something else, broil the chicken. Traditionally a fryer is used, but boneless strips of white meat chicken will speed up this process considerably.

Once the chicken is done, tear it into small managable strips and toss them into a large mixing bowl.

Add both cans of Rotel (do not drain) Add both cans Cream of Mushroom Soup (do not drain) Stir mixture well to blend evenly

Crush a half bag of Frito's and spread them onto the bottom of the casserole dish approximately 1/8" thick. Spoon the mixture out over the Frito's Pour the remaining half of the crushed Frito's over the top of the mixture.

Bake at 325 degrees for 25-30 minutes. While the dish is cooking, grate the cheese (obviously pre-grated cheese will speed up this process). Remove the dish from the oven and cover it with grated cheese. Turn the oven off, and return the dish to the oven. Once the cheese has melted over the top of the casserole, your Chicken Taco Pie is done and ready to eat! Serve with Sour Cream.
Tips & Warnings
This is an excellent recipe that easily serves 5+ people. It is a casual, quick meal great for adults and children alike. Less Rotel and more soup can be added to ease spiciness if spicy is not your thing.
This recipe is not Gluten Free, although it can be. The only ingredient to worry about is the Soup, and Gluten-free Cream of Mushroom soup can be purchased at most healthfood stores, such as Whole Foods, or Gluten-free mall dot com
