How to Make Hot Cross Buns

Hot cross buns can be found at bakeries across Britain during Easter season. They're a sweet and spicy roll that are traditionally served on Good Friday, but you can enjoy this light bread with tea or coffee any time of year. If you use a bread maker, you'll enjoy perfectly-made dough. Here's how to make a batch of authentic hot cross buns.

Things You’ll Need:

  • 3/4 cup warm water
  • 1 tablespoon active dry yeast
  • 3 tablespoons cold butter
  • 1 tablespoon instant powdered milk
  • 1/4 cup white sugar
  • 3/8 teaspoon salt
  • 2 eggs, one separated
  • 3 cups all-purpose flour
  • 3/4 cup dried raisins/currants
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
Step1
Mix together warm water, butter, skim milk powder, 1/4 cup sugar, salt, egg, one egg white, flour, and yeast in a medium bowl. Combine thoroughly, then pour into bread maker.
Step2
Start bread maker and let it run until thoroughly kneaded. Add currants/raisins, cinnamon, and nutmeg during the last 5 minutes of mixing. Leave in machine until bread has doubled in size.

Remove dough from bread machine. Place on a floured surface and punch down. Knead and spread out, then let it rest for 10 minutes.

Preheat oven to 375 degrees Fahrenheit.

Shape into 10-12 small balls and place in a greased 9 x 12 inch pan. Cover with a light kitchen towel and leave in a warm place to rise again. Wait about 45 minutes until dough doubles in size.

In a small bowl, mix together egg yolk and 2 tablespoons water. Brush onto the dough evenly and set aside. Cut a criss-cross shape on the top of each.
Step7
Prepare dough crosses. Mix together 1/4 cup of flour with 3 tablespoons water to make a light dough.
Step8
Roll out dough on lightly floured surface. Cut into thin strips with a sharp knife. Lay strips on buns in a cross pattern.
Step9
Bake the buns for 20 minutes until brown.
Step10
Remove buns from pan and set on a wire rack to cool.

Tips & Warnings

  • Hot cross buns made with chocolate chips are popular in Australia.
  • Some people enjoy hot cross buns with a confectioner's sugar icing across the top, however the traditional version is served plain with a simple dough cross.
  • Avoid underbaking the buns by baking them for a minimum of 20 minutes.
