How to Make English Custard
English custard, sometimes referred to as a British sauce, is a favorite treat throughout Europe. The rich custard can be served alone or with pound cake; you'll find it in the classic English trifle as well. If traveling to Europe is not an option, make your own English custard from scratch by following a few simple steps. Does this Spark an idea?
Things You'll Need
- Small saucepan
- Spoon
- 1 fresh vanilla pod
- 10 ounces double cream or heavy whipping cream
- Whisk
- Bowl
- 4 large egg yolks
- 1 teaspoon cornstarch
- 1/3 cup light brown sugar or honey

Split the vanilla bean pod and scoop out the seeds. Place the seeds and the pod with the cream in a small saucepan. Heat the cream on a low heat setting to bring it to a simmer.

Whisk the egg yolks, sugar and cornstarch in a medium bowl until thoroughly combined.

Remove the vanilla bean pod from the cream mixture. Slowly pour the cream over the egg yolk mixture as you continue to whisk the egg mixture.

Pour the mixture back into the saucepan and gently whisk until custard becomes thick. It will become more smooth as it simmers.

Continue whisking until the custard becomes thick, smooth and is the consistency of a pudding.

Pour the mixture into a bowl, cover it with plastic wrap and let it cool.

Serve custard warm with pies and other hot desserts.
Serve custard cold with cakes and puddings.
Custard is a great dessert all on its own.
Prevent eggs from congealing by whisking heavily as you combine it with the hot mixture.
