Things You'll Need:
- carrots (around 6-8)
- lentils (one and a half cupfuls
- 1 onion
- garlic
- cumin
- coriander
- vegetable stock
- juice of 1 lemon
- olive oil
- a blender

Step 1
First chop the onion and carrots.

Warm the olive oil in a large saucepan. Then add the onions and fry. After about 2 minutes, add the cumin, coriander and garlic. Fry until the onions are slightly browned.

Add the carrots, lentils, vegetable stock, and some water. Bring to the boil and then leave to simmer on a low heat for at least 20 mins. Try to add the right amount of water so that the soup is neither too thin or too thick. It's best to add less water to start off with- you can always add more later on.

When the carrots are soft, take the pan off the heat and blend the soup- a hand blender is usually easier for this.

Once blended, put the soup back on a low heat to reheat. Add more cumin, coriander and seasoning to taste. Also add the lemon juice.

Your soup is now ready to serve!
