Step1
As an appetizer, whet your appetite with a low carb version of pigs in blankets. Rather than wrapping your cocktail sausages in pastry dough, why not wrap each sausage in a rasher of bacon? Use a cocktail toothpick to secure and bake as normal.
Step2
Begin your feast with a low-carb french onion soup.
Heat 1 tbsp olive oil with 2 tbsp butter in a large saucepan over medium heat. Lower to a simmer and add in 2 medium-sized sliced onions. Saute 8-10 minutes until golden.
Add 5 cups beef broth and 1 tbsp worcestershire sauce and heat on medium until the boil. Reduce heat and simmer for 5 minutes. Add 2oz grated parmesean cheese and season with salt and pepper. Simmer for further 5 minutes, stirring occasionally.
Serve with grated mozzarella and cheddar.
Step3
A salad course with low carb veggies such as: lettuce, cucumbers, onions and peppers. Add an oil & vinegar dressing for more flavour.
Step4
While you'll have to steer clear of stuffing, a turkey basted with butter can be enjoyed. About an hour before your turkey has finished cooking, try laying rashers of bacon along the breast. Not only will it give you an additional protein for your feast - it will add flavour and stop your turkey from drying out!
Step5
Low carb vegetables such as aspargus (served with butter), spinach or brussel sprouts can be served on the side to help you get your 5-a-day.
Step6
While others tuck into their pumpkin pie, why don't you do the same? Make a crustless pumpkin pie!
In a mixing bowl combine: 1 1/2 c canned pumpkin, 3 eggs, 3/4 c Splenda or sugar substitute, 1/2 tsp salt, 1 tsp cinnamon, 1 3/4 tsp pumpkin pie spice and 3/4 c heavy cream. Pour into a well greased pie dish. Bake at 350 until set, about 30-40 minutes.
