How to make a low fat pumpkin bread

Don't deny yourself all of those great treats over the holidays. This spiced pumpkin cake is easy to make and not as lethal as other sugar and fat-laden recipes. Cinnamon, nutmeg and cloves spice up this low-fat twist on pumpkin bread. Serves 18.

Instructions

Things You'll Need:

  • 2 c unbleached flour
  • 1 c brown sugar
  • 1 tbsp baking powder
  • 2 tsps cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp baking soda
  • 1/4 tsp ginger
  • 1/4 tsp cloves
  • 1 15 oz can pumpkin
  • 1/2 c skim milk
  • 2 whipped egg whites,
  • 1/3 c fat-free sour cream
  1. Step 1

    Preheat oven to 350F.

  2. Step 2

    Spray 13" x 9" rectangular cake tin with low/no fat cooking spray.

  3. Step 3

    In a large bowl, combine: flour, brown sugar, baking powder, baking soda, cinnamon, nutmeg, ginger and cloves. Set aside.

  4. Step 4

    In a medium bowl, mix together: pumpkin, milk, eggs and sour cream.

  5. Step 5

    Add pumpkin mixture to your flour mixture. Mix until just moist.

  6. Step 6

    Spoon batter into your prepared cake tin.

  7. Step 7

    Bake for 60 minutes.

Tips & Warnings
  • Portion control can be helped by preparing muffins instead!
