Things You'll Need:
- One quart light-colored ice cream
- One cup sugar
- Two teaspoons cinnamon
- Candy rocks and/or shells
- Gummy sea creatures
- Plastic sand castle mold

Step 1
Set the ice cream to soften for 15 minutes. Spoon the ice cream into the mold. Pack the ice cream firmly enough to ensure all the shapes in the mold are filled.

Cover the mold with plastic wrap. Freeze the mold overnight or until the ice cream is completely firm.

Mix the cinnamon and sugar in bowl. Add additional cinnamon or cocoa if the color is too light.

Wrap foil around a large tray. Fold the edges of the foil into a lip to catch any stray cinnamon and sugar.

Unmold the castle by quickly dipping it into three quarts of hot tap water. Quickly immerse the mold for one to two seconds, keeping the open end out of the water.

Invert the foil tray onto the opening of the mold. Quickly flip the castle onto the tray, and lift the mold off.

Sprinkle the cinnamon and sugar mixture on the entire castle. Make the coating as thick as possible. Collect all the excess mixture, and return the cake to the freezer.

Step 8
Remove the cake from the freezer just before serving. Pour the remaining cinnamon and sugar around the base of the cake to form the beach. Decorate the beach with candy rocks and gummy sea creatures.
