How to Make Joe Froggers

These delicious gingerbread cookies will delight any dessert fan. They're named after Black Joe, whose wife would make these cookies for sailors to take on long journeys. The cookies can be as big as lily-pads, hence the name Joe Froggers. If you're tired of serving your guests plain old chocolate chip cookies, try dazzling them with these gingerbread Joe Froggers.

Instructions

Things You'll Need:

  • 3/4 cup hot water
  • 1/4 cup plus 1 tsp. dark rum
  • 2 sticks butter
  • 2 cups sugar
  • 2 tsp. baking soda
  • 2 cups dark molasses
  • 6 cups flour, plus extra flour for rolling the cookies
  • 1 Tbsp. salt
  • 1 1/2 tsp. ginger
  • 1 tsp. cloves
  • 1 tsp of allspice
  • 1/2 tsp. nutmeg
  • 4 mixing bowls
  • Plastic wrap
  • Cutting board
  • Rolling pin
  • Cookie cutter or knife
  • Cookie sheet
  1. Step 1

    Pour 3/4 of a cup of hot water into a small bowl. Add the rum.

  2. Step 2

    Cream 2 sticks of butter with 2 cups of sugar in a large mixing bowl.

  3. Step 3

    Blend 2 tsp. baking soda with the molasses in a third mixing bowl.

  4. Step 4

    Mix 6 cups of flour, 1 Tbsp. salt, 1 1/2 tsp. ginger, 1 tsp cloves, 1 tsp. allspice and 1/2 tsp. nutmeg in another mixing bowl.

  5. Step 5

    Add the water and rum mixture to the butter and sugar mixture. Mix in the molasses, and then the mixture of spices and flour.

  6. Step 6

    Separate your dough into 3 equal pieces. Cover each piece with plastic wrap and refrigerate it overnight.

  7. Step 7

    Spread flour on your cutting board when your dough is ready. Using a rolling pin, roll the dough flat and cut the cookies to whatever size you'd like.

  8. Step 8

    Bake your cookies on a cookie sheet at 375 degrees. After about 10 minutes, your gingerbread Joe Froggers will be ready.

Tips & Warnings
  • Add some water if your dough is too hard. If your dough is too moist and sticky, add some flour.
