There are times when even the special meal can become boring. Add some spice and difference to barbecue by making a mango sauce.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • Food processor
  • Bowl
  • Knife
  • 1 cup of chopped mango
  • 1/2 red onion sliced
  • 2 poblano chili peppers
  • 6 plum tomatoes
  • 1/4 cup chopped basil
  • 1/4 cup chopped coriander
  • 1/4 cup chopped parsley
  • 3 tbsp. cloves of garlic, chopped
  • 3 tbsp. olive oil
  • 3 tbsp. lime juice
  • Black pepper to taste
  • Salt to taste
  1. Step 1

Grill the tomatoes, onions and peppers until they have started to soften. Allowing the vegetables to grill for a time will add a bit of smoky flavor to the sauce.

  2. Step 2

Chop the vegetables coarsely and place in afood processor. Process until everything is chunky. At this point, remove them from the processor and refrigerate them for about an hour so all the flavors can meld.

  3. Step 3

Blend the vegetables in the food processor in batches until smooth and store them in the refrigerator until ready to use.

Tips & Warnings
  • Before cooking the meat, marinate it in the refrigerator for at least one hour covered in barbecue sauce.
  • Add more zing to the sauce by adding cayenne pepper to taste.
