How to Make Marzipan Easter Eggs

Marzipan is a confection made from sugar and ground almonds. Marzipan desserts are popular during Easter in the United States and are common during weddings and holidays in Europe. Marzipan Easter eggs should not be frozen or microwaved. The following recipe will make five large Marzipan Easter eggs that can be served with coffee. Does this Spark an idea?

  • 250 g blanched almonds
  • 125 g dark chocolate
  • 15 g coconut shortening
  • 2/3 cup sugar
  • 2 tbs. water
  • 1 tbs. lemon juice
  • 1 tsp. brandy

Instructions

      Blend the almonds as finely as possible. Heat the sugar, water and lemon juice in a small saucepan without boiling and stir until the sugar is dissolved.

      Boil without stirring until the syrup thickens but before it darkens. This should take about three minutes and the syrup should be removed from heat immediately once it reaches 240 degrees. Allow the syrup to cool until the bubbles subside and pour it onto the ground almonds in a thin, steady stream.

      Mix the syrup quickly with a fork until it is too thick to stir. Wrap the mixture in plastic wrap or foil and allow it to cool to room temperature.

      Dust your fingers with icing sugar and work the brandy into the mixture. It may be wrapped and stored in the refrigerator but must be warmed to room temperature before using.

      Divide the mixture into 5 equal portions. Mold each piece into an egg shape with your hands and place on a tray covered with foil. Melt the chocolate and shortening together and spread the mixture over the base of each egg. Spoon chocolate over each egg and refrigerate until served.
