Shredded chicken sandwiches = comfort food. This method takes a while but you don't need to tend to the cooking. This method of boiling chicken is a great way to have healthy cooked chicken on hand for all kinds of salads and meals.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 whole chicken
  • 2 cans cream of mushroom soup
  • 4 ounces ritz crackers (crumbled)
  • 1/2 teaspoon sage (or poultry seasoning)
  • 12 buns
  1. Step 1

Fill a large pot 2/3 full of water and bring to a boil. The pot must be large enough to fully submerge the chicken.

  2. Step 2

Wash the chicken then dunk the whole chicken into the boiling water. After a few minutes remove the chicken and bring the water back to a boil. Return the chicken to the boiling water, cover the pot and turn off the heat. Let sit for 1 hour 15 minutes.

  3. Step 3

Remove the chicken and let cool. Remove and discard skin. Remove the meat then shred by pulling apart with two forks.

  4. Step 4

Add chicken, soup, crackers and sage to sauce pan, and heat over medium heat for 20 minutes, stirring frequently.

  5. Step 5

    Serve over toasted buns.

Tips & Warnings
  • Save bones for chicken stock
  • Substitutions: Cream of celery soup for cream of mushroom, or a mixture of any cream soup.
  • Use BBQ sauce instead of soup (along with a dash of vinegar), omit crackers and only cook for a few minutes. Serve with cole slaw over buns for pulled chicken BBQ sandwich.
