How to Make Thanksgiving Leftovers Soup

The one thing everyone expects after the Thanksgiving meal is done, is leftovers from the dinner for days after. Thanksgiving soup is a meal you can make in the crock pot and then freeze for those really cold days of winter.

Instructions

Difficulty: Easy

Things You’ll Need:

  • Turkey
  • Mashed Potatoes
  • Any Leftover Veggies
  • Cranberry Sauce
  • Large Crock Pot
  • Gallon Freezer Bags
Step1
Remove any remaining turkey meat from the carcass. Put the carcass into your crock pot and cover with water. Turn the crock pot to low and allow the carcass to cook overnight. Store the remaining leftovers, including the turkey meat, in the refrigerator.
Step2
Turn off the crock pot the next morning and allow the stock to cool. Remove the bones from the turkey stock in the crock pot. Add to the stock any leftover vegetables.
Step3
Add 1 cup mashed potatoes and any remaining cranberry sauce. Add a handful or more of leftover turkey. Stir to blend all the ingredients together.
Step4
Turn the crock pot back on low and allow to cook the rest of the day. Serve for dinner if desired or freeze in gallon size freezer bags for later.

Tips & Warnings

  • This can also be made in a large stock pot on the stove. Simmer the turkey carcass at least three hours for the stock, let cook, remove bones and add the other ingredients and cook for several hours more.
  • Served with fresh bread, this makes a complete meal on a cold winter day.
  • Be sure and remove all bones from the stock, as they can be a choking hazard.
