If you're diabetic or trying to lose weight, cutting back on sugar is much easier when you have tasty, sugar-free recipes of your favorite foods available. Sugar-free brownies are easy to make and taste almost like the classic recipe. A few substitutions is all it takes to make some rich, decadent brownies so you can curb those chocolate cravings without the guilt!

From Quick Guide: Diabetic Recipes
Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1/2 cup pure or organic butter
  • 1/4 cup unsweetened cocoa powder
  • 1 1/4 cup Splenda
  • 1 cup all-purpose flour
  • 1/4 tsp baking powder
  • 1/4 cup 2% milk
  • 1/2 cup unsweetened chocolate baking bits
  • 1/2 teaspoon vanilla
  • 8x8 inch baking pan
  • Baking spray
  1. Step 1

Preheat oven to 350 degrees Fahrenheit and spray the baking pan with baking spray.

  2. Step 2

Melt the butter and mix with unsweetened cocoa powder in a small saucepan over low heat. Mix together until smooth, then remove from heat and let cool.

  3. Step 3

Beat eggs in a large bowl, and mix in the Splenda, baking powder, and flour. Add the chocolate mixture and stir thoroughly.

  4. Step 4

Fold in the unsweetened baking bits and milk, then pour into pan.

  5. Step 5

Bake for 30 minutes until slightly undercooked. Brownies will set when they cool.

Tips & Warnings
  • This recipe makes thick and fudgy brownies, not cakey brownies that many people are accustomed to.
  • Store the brownies in an airtight container to maintain freshness.
  • Serve with sugar-free vanilla ice cream for a homemade sundae.
  • These brownies will fall flat if you don't remember the baking powder!

on 7/31/2009 I tried the recipe, though it didn't provide the amount of eggs to use. I used two eggs. I also used 1/2 Splenda and 1/2 real sugar, as well as using 1/4 cup Smart Balance Light, and 1/4 cup real butter instead of 1/2 cup butter. I also only baked brownies for about 17-18 minutes because they already looked like they were setting. They turned out great, and I will use the recipe again, with my modifications. So, with 50% less sugar and app. 1/3 less fat than the typical brownie, I think the modifications make this a great recipe to use.
