How to make Sweet Potato Casserole - for Diabetics

Have a diabetic in the family? Need some fresh ideas on what to make for the upcoming holiday meal? This recipe for sweet potato casserole is sure to be unforgettable!

Instructions

Things You'll Need:

  • 2 1/2 # Sweet Potato's
  • 2 tbsp. low-cal margerine
  • 1/3 c. skim milk
  • 1/4 c. brown sugar
  • 1 tsp. vanilla
  • 1 tsp. ground cinnamon
  • 2 egg whites
  • 1/2 tsp. salt
  • 1/3 c. finely chopped pecans
  1. Step 1

    Preheat the oven to 375* degrees.
    Bake potato's until tender ( typically around 1 hour)
    allow to cool for 10 minutes.
    Clean potato from skins, place into a bowl.

  2. Step 2

    Add margarine to potato's and mix until smooth.
    Then stir in milk, brown sugar,cinnamon, and vanilla; mix well.

  3. Step 3

    Beat egg whites until they form into "soft peaks"
    Add salt, beat again until "stiff peaks" form.

    Fold egg whites into the sweet potato mixture.

  4. Step 4

    Use non-sticking cooking spray to a souffle dish.
    Spoon in sweet potato mix.
    top with pecans.

  5. Step 5

    Bake 30-35 minutes or until casserole has "puffed" and pecans are toasted!

    Serve!
