Things You'll Need:
- 2 1/2 # Sweet Potato's
- 2 tbsp. low-cal margerine
- 1/3 c. skim milk
- 1/4 c. brown sugar
- 1 tsp. vanilla
- 1 tsp. ground cinnamon
- 2 egg whites
- 1/2 tsp. salt
- 1/3 c. finely chopped pecans

Step 1
Preheat the oven to 375* degrees.
Bake potato's until tender ( typically around 1 hour)
allow to cool for 10 minutes.
Clean potato from skins, place into a bowl. -
Step 2
Add margarine to potato's and mix until smooth.
Then stir in milk, brown sugar,cinnamon, and vanilla; mix well. -
Step 3
Beat egg whites until they form into "soft peaks"
Add salt, beat again until "stiff peaks" form.
Fold egg whites into the sweet potato mixture. -
Step 4
Use non-sticking cooking spray to a souffle dish.
Spoon in sweet potato mix.
top with pecans. -
Step 5
Bake 30-35 minutes or until casserole has "puffed" and pecans are toasted!
Serve!
