Making pancakes without eggs, milk or cream may seem impossible, but there are ways to go dairy free. You can enjoy delicious, flavorful, and fluffy pancakes that complement a vegan diet with a few key ingredients. Here's how to make tasty pancakes that the whole family can enjoy for breakfast, a snack, or even dessert!

Things You'll Need:

  • 1 1/2 cups uncooked oatmeal
  • 1 1/2 cups organic whole-wheat flour
  • 2 cups water
  • 1 large ripe banana
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond flavoring
  • Oil or cooking spray
  1. Step 1

    Mash the banana and mix it with water to form a paste. Set aside.

  2. Step 2

    Add oil or cooking spray to a skillet and turn the heat setting to 'High.'

  3. Step 3

    Add all dry ingredients to the banana paste and mix thoroughly. There will be lumps in the batter but these will even out during cooking.

  4. Step 4

    Pour a 1/2 cup of batter onto the hot skillet and let it cook until bubbles form on the surface. Lower the heat setting and flip the pancake.

  5. Step 5

    The pancake is cooked when it turns a light brown color on both sides.

  6. Step 6

    Top with natural maple syrup or fresh fruit topping of choice. Organic chocolate syrup works well too!

Tips & Warnings
  • This recipe can also be used in a waffle maker for homemade waffles.
  • Add chocolate chips for or dried fruit for variation.
  • The pancakes or waffles can be frozen for later use.
  • Add fresh fruit compote or jam for a seasonal treat.
  • It's easy to burn the batter if the skillet is too hot; test the surface with a few drops before spooning the batter onto the pan.
