How to Make A Banoffee Pie

While this recipe does require a lot of cooking time, it's worth every minute when you taste its unusual combination of bananas, toffee and coffee. This English pie has only been about for just over 30 years, but it's already a classic dessert dish. Serves 8 - 10.

Instructions

Difficulty: Moderate

Things You’ll Need:

  • 1 16 oz can condensed milk
  • 3/4 pint whipping cream
  • 1 tsp sugar
  • 1/2 tsp instant coffee
  • 1 1/2 lbs bananas, peeled & halved
  • 1 pre-cooked pie shell
Step1
Using a large saucepan, boil water.
Step2
Immerse unopened condensed milk can in boiling water.
Step3
Boil for 5 hours.
Step4
Allow to cool.
Step5
Whip cream with sugar and coffee until thick and smooth.
Step6
Spread the contents of the condensed milk can onto your pie base. It should be caramelised and have a golden hue.
Step7
Arrange your bananas on top of your caramelised condensed milk layer.
Step8
Carefully spoon on cream and sprinkle with coffee powder.
Step9
Serve.

Tips & Warnings

  • This dish also works well with a graham cracker crust for a slightly richer, sweeter taste.
  • Instead of spooning cream over the top, for a more professional touch, try using a piping bag to pipe it on.
