Things You'll Need:
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup (2 sticks) butter, softened
- 3/4 cup granulated sugar
- 3/4 cup packed brown sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground chipotle (or more to taste)
- 2 large eggs
- 2 cups semisweet chocolate chips
- Optional: 1 cup pine nuts

Step 1
Preheat the oven to 375 degrees. If the oven is unreliable as many older models tend to be, you might want to use an oven thermometer and adjust the settings accordingly as you don't want the cookies to burn.

Combine the flour, baking soda, and salt in a medium-sized bowl. You can sift the flour if you'd like, but it really isn't necessary.

Beat the butter with the two types of sugar and the vanilla in a large bowl until the mixture is creamy, then beat in the eggs, one at a time. Stir in the chipotle powder. Add just a teaspoon if you only want a little spice, but you can add up to a tablespoon (or more!) if you like things hot.

Slowly add the flour mixture to the butter mixture. It is best to add about a quarter cup at a time, stirring until the mixture is completely absorbed before adding more. When the two mixtures are thoroughly combined, stir in the chocolate chips and the pine nuts, if you're using them.

Use a tablespoon to scoop up the cookie dough and drop it onto an ungreased baking sheet. You can also use your hands to mold the dough into a ball about the size of a walnut. Be sure to leave plenty of room between each cookie because they spread out when you bake them.
