How to Make Greek Lamb and Pototoes

No holiday in a Greek home is complete without succulent lamb and roasted potatoes. Some Greek homes choose to roast an whole lamb on an open pit outside but others choose to roast a leg of lamb inside, letting the juices cook the potatoes that are placed in the roasting pan with the lamb. It is divine and really quite easy to make.

Instructions

Things You'll Need:

  • 1 leg of lamb 5 to 6 lbs. 10 to 12 medium potatoes Salt Pepper 1 head of garlic 1 lemon Water
  1. Step 1

    Wash the lamb well before preparing. With a sharp kitchen knife make a dozen or so slits all over the leg of lamb. Place a clove of garlic deep inside of each.

  2. Step 2

    Rub the lamb down with the lemon and then generously sprinkle the pepper on the lamb making sure to get the bottom as well.

  3. Step 3

    Cover the entire leg with salt, to the point where there is not one part of the lamb that does not have salt on it (the salt will help keep the moisture in and will slide off with the grease of the lamb as it cooks, so do not worry that it will taste overly salty).

  4. Step 4

    Place the lamb in a large roasting pan with enough water to cover about ¼ of the lamb.
    Peel and quarter about 12 medium sized potatoes and place them all around the lamb.
    Bake in a preheated 350 degree F oven for 1 ½ hours.

    Serves 8

Tips & Warnings
  • Depending on your own personal taste you may add less or more garlic.
  • Use a baster to cover the lamb and the potatoes with the juices that have collected in the bottom of the pan just before serving.
  • Make sure that the lamb has been cooked all the way through.

on 10/4/2008 This sounds really good. I was never really aware of Greek or Mediteranean foods until we visited thearea a few years ago - it really opened my eyes to things like lamb that I had never considered before.

on 11/26/2007 With all these lamb recipes abounding, does anyone have a lamb curry recipe with apples, onions, consomme'or beef broth? I used to make it many years ago, but I can't find it. lady99book@comcast.net
