How to make Tofu Spinach Lasagna

Instructions

Things You'll Need:

  • 1 box lasagna noodles (regular or whole wheat)
  • 1-2 packages of low fat tofu (firm)
  • 1 pkg spinach (frozen)
  • 1 bottle spaghetti sauce
  • 1 tsp sea salt
  • 1 tsp basil
  • 2 cloves garlic
  • non-stick cooking spray
  1. Step 1

    Preheat oven to 350 degrees (or 375 degrees).

  2. Step 2

    Put tofu, basil, chopped spinach and sea salt in a large bowl and mash mixture with a potato masher.

  3. Step 3

    In a medium-sized bowl, mix together spaghetti sauce and diced garlic (or you can use garlic powder).

  4. Step 4

    Cover the bottom of a 9x12 inch baking pan with a thin layer of non-stick cooking oil, spaghetti sauce/diced garlic followed by a layer of noodles. On top of that, add a layer of tofu, spaghetti sauce and spinach until all of the mixture is used up. End with a layer of noodles.

  5. Step 5

    Cover pan with aluminum foil and bake for 40-45 minutes. Aluminum foil helps to keep lasagna moist.

  6. Step 6

    Remove from oven, and let cool for an additional 15 minutes.

Tips & Warnings
  • Have one bottle of spaghetti sauce on hand in case you run out before you're done preparing this dish.
  • make sure you season your tofu well.
  • don't use no-boil lasagna noodles. Use the regular ones instead.
