How to Make a Sausage and Peppers Turkey

Think about any time you have been to a fair, swap meet, carnival or some other kind of event where all you can smell when you walk around is the cart that is selling delicious sausage and pepper sandwiches. This is a marvelous smell that can give you a warm feeling all over. For the holidays, or any other time of year, you can actually make a roast turkey (or chicken, your choice) that is reminiscent of your favorite sausage and pepper sandwiches!

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • Turkey for roasting (your choice of size)
  • 2 onions
  • 3 peppers (your choice of green, red or yellow or even a mix of all three!)
  • 1 package (or about 4 medium size) sausage links, raw, your choice of sweet, spicy or regular
  • 1 can of beer for basting
  • Coarse salt
  • Ground black pepper
  • Butter (for rubbing the skin
Step1
Preheat the oven according to the size of the turkey that you are cooking, many will have the instructions included. Generally, a perfect temperature for roasting turkey is 375°.
Step2
Be sure to completely wash your turkey and always remember to remove the packet of giblets! (You would be amazed at the amount of people who forget this important step!)
Step3
Go ahead and put together the mixture for stuffing the turkey. Simply cut all of the onions into small slices or chunks and place in a large bowl. Then you can cut all of your peppers into small chunks, making sure to discard the seeds and cores. Then take your sausage links and cut them down to bite size chunks and place in the bowl. Take some of your salt and pepper, 1/2 teaspoon of each, and place in the bowl as well. Simply stir and then you are ready to stuff this mixture inside the turkey.
Step4
After you stuff the mixture into the turkey cavity, it is a good idea to take some cooking string to close it up. This will help to keep any of the seasonings and stuffing from falling out into the pan.
Step5
Begin the preparations on the turkey by patting dry after washing. Take the butter and begin to rub and massage it all over the outside of the turkey all over the skin. This will help to create a wonderful brown crispness to the skin. After rubbing the butter on the outside, sprinkle generously with the remaining salt and pepper, pour half of the can of beer into the bottom of the roasting pan and you are ready for the oven!
Step6
While your turkey is cooking, be sure to use the beer and juices in the bottom of the pan to baste for juiciness!

Tips & Warnings

  • If you are a fan of stuffing, you can still have your stuffing on the side. This recipe works wonders to keep the turkey juicy and filled with an incredible aroma and flavor.
  • When you serve the turkey, you can even have buns available so diners can enjoy their own sausage and peppers with roast turkey sandwiches.
  • To avoid cooking your turkey skin too quickly and possibly burning, You can always either cover your roaster pan, use foil to cover or even roast inside of a roasting bag.
