How to Make Vegetarian "Tuna" Salad

Making delicious vegetarian choices doesn't have to be expensive or difficult. This recipe uses everyday ingredients to make a substitute tuna salad. Serves two.

Instructions

Things You'll Need:

  • 1 can (15 oz) chickpeas
  • Two tablespoons vegan mayo OR one tablespoon hummus and one tablespoon soy milk
  • A handful (about 5) baby carrots, chopped
  • One celery stalk, chopped
  • Two teaspoons soy sauce
  • Salt and pepper to taste
  1. Step 1

    Drain and empty the chickpeas into a medium bowl. Using a fork, smash the chickpeas to a chunky paste.

  2. Step 2

    Add vegan mayo OR hummus and soymilk and stir with fork until well blended.

  3. Step 3

    Add soy sauce, salt and pepper, carrots and celery. Mix together thoroughly.

  4. Step 4

    Serve on a green salad, in a sandwich or as a dip.

Tips & Warnings
  • If you have difficult smashing chickpeas, microwave for 30 seconds (only before adding other ingredients!)
