How to Re-hydrate Dried Vegetables

Dehydrated vegetables or vegetable combinations are a good items to have on your pantry shelf. Easy to store and simple to re-hydrate, they can add flavor and nutrition to soups and salads or be used as a side dish in any meal.

Dehydrated vegetables can be purchased in serving size packages or in bulk from health food stores or online.

Things You'll Need:

  • Dehydrated vegetables or vegetable combos
  1. Step 1

    Measure the amount of dehydrated vegetables you need for the recipe you are preparing. Add boiling water at the ratio of 3 to 1. Allow to sit for approximately one hour or until vegetables are soft and have absorbed most of the water. Drain if desired.

  2. Step 2

    Toss a pre-measured amount of dehydrated vegetables directly to soups and stews. As the soup cooks, the veggies will re-hydrate and add flavor.

  3. Step 3

    Add dehydrated vegetables to three times the water in a saucepan and simmer for thirty minutes for a quick to fix veggie side dish.

Tips & Warnings
  • Re-hydrated vegetables can be hidden in spaghetti sauces and other tomato based dishes.
  • Re-hydrated vegetables are fantastic in pasta salads. Add tuna, chicken or turkey for a complete meal.
  • Dehydrated vegetables are a better deal when purchased in bulk. Deals online are generally better than purchasing local, even with shipping costs.
  • Re-hydrated vegetables can be pureed in a blender to make baby food. Re-hydrated vegetables also make good first finger foods for baby.
  • Never attempt to eat dehydrated vegetables with re-hydrating first. You could easily break a tooth.
