How to Make Smashed Potatoes

Ever want delicious mashed potatoes but too lazy to go through all that trouble you recall every Thanksgiving with the peeling and the boiling and the big mixer? Here is a quick and easy way to make delicious "smashed" potatoes. The ingredients make 4 servings but can be multiplied or divided to suit your needs. Also, feel free to sub in other tasty ingredients like garlic or leave out the cheese and chives and just add butter or margarine!

Instructions

Things You'll Need:

  • 2 to 2 1/4 pounds baby Yukon gold potatoes
  • 1/4 cup sour cream
  • 2 cups shredded Cheddar
  • 3 tablespoons chives, chopped or snipped
  • Salt and black pepper
  • Large pot
  1. Step 1

    Wash and cut potatoes into quarters.

  2. Step 2

    Place in a large enough pot to cover all the potato pieces with water. Place on stove and bring to a boil.

  3. Step 3

    When the water begins to boil, add 2 pinches salt and boil together for 10 minutes or until the potatoes feel tender. Test them with a fork.

  4. Step 4

    Drain the water.

  5. Step 5

    If you have a masher tool, begin smashing the potatoes inside the hot pot. Careful not to burn yourself! You can also use one or two forks together, or slice the quarters smaller with a knife and then use a fork to "smash" the pieces.

  6. Step 6

    As the potatoes get mashed up, add in sour cream and cheese. Keep mashing.

  7. Step 7

    When the cheese is melted in and the sour cream is blended with the potatoes, add the chives and some pepper.

  8. Step 8

    Re-mash with all the ingredients and then adjust seasonings to taste!

Tips & Warnings
  • You can't really go wrong changing up this recipe adapted from the Food Network. You can eliminate the sour cream and use salsa or nix the whole cheese and sour cream aspect and stick to garlic and butter--the choice is up to you!
  • Careful not to burn yourself.
