  • yellow cake recipe - or boxed cake mix
  • half a sheet pan
  • favorite jam or jelly

      Preheat oven to 350. Prepare the cake mix according to the box or recipe.

      Grease your sheet pan. This would be a half a full sheet pan, not a cookie sheet with no sides. Sheet pans have a half an inch side all around. Pour your cake batter into the sheet pan, and place in the oven. Cook for 20 to 25 minutes or until golden brown, and a toothpick stuck into the center comes out clean. Let cool

      Lay out a generous portion of plastic wrap on your counter. Slowly turn the sheet pan upside down onto the plastic. Let the cake fall out.

      With a thin frosting spatula spread a thin layer of jam over the entire cake bottom, leaving about 1 inch at either end.

      Once the jam is spread slowly cake into a cylinder. Lay the plastic wrap over the top of the roll, and pull the bottom of the plastic sheet until the roll tightens a bit. Try not to pull to tight or the cake will break. Wrap the cake in the plastic. Place the cake seam side down on a flat plate or sheet pan and let chill in the refrigerator.

      The cake will set-up in about an hour. After which slicing is much easier. Slice into half inch slices and serve with ice cream or a dollop of whipped cream.
