How to Make a Wonderful Breakfast Casserole
This delicious breakfast casserole serves eight to 10 people and is a great addition to your breakfast or brunch table. It also can be made the night before, if needed, and baked just before breakfast. While primarily an egg casserole, it also includes bacon, three kinds of cheese and hash brown potatoes. If you are looking to lighten up the calories with this dish, substitute egg whites, low-fat cheeses and turkey bacon. Does this Spark an idea?
Things You'll Need
- 1 lb. sliced bacon
- 1 medium sweet onion, diced
- 6 eggs, lightly beaten
- 4 cups frozen shredded hash browns
- 2 cups mild cheddar cheese, shredded
- 1 1/4 cups Swiss cheese, shredded
- 1 1/2 cups small curd cottage cheese
- Large frying pan
- 9-by-13-inch casserole dish

Preheat the oven to 350 degrees.
In large frying pan or skillet, cook the bacon over medium-high heat until it is crisp. Add the onions to the skillet for the last few minutes while cooking the bacon. Drain the bacon on paper towels and set aside the onions for later.

Mix together in a large bowl the hash browns, cheddar cheese, Swiss cheese, cottage cheese and the beaten eggs.

Add the bacon, crumbled, and onions to the mix above.

Grease a 9-by-13-inch casserole dish and spread the egg mixture evenly in the dish.

Put the pan in the center of the oven. Bake it uncovered for approximately 35 to 40 minutes. When the eggs are set and bubbling, it is done.
Let this casserole stand for 10 minutes before serving.
