How to Make a Vegan ‘Cheese’ Sauce

Often, for the new vegan, cheese and cheese sauces are some of the food products that are the hardest to give up. Nutritional yeast, along with a few other ingredients, can make a tasty substitute for cheese sauce. Simple to make, this recipe can be used for any recipe calling for a cheese sauce and is especially wonderful for macaroni and cheese.

Instructions

Things You'll Need:

  • 1 large saucepan
  • Wire whisk
  • 1 cup nutritional yeast flakes
  • 1 cup flour
  • 1 tsp. salt
  • 1 tsp. garlic powder
  • 4 cups water
  • ½ cup margarine
  • 2 tsp yellow mustard
  1. Step 1

    Mix all dry ingredients in the saucepan. Add the water, whisk briskly to blend all ingredients.

  2. Step 2

    Cook over medium heat, whisking constantly. Bring to a boil and cook for 25 to 30 seconds, or until thick. Remove from heat.

  3. Step 3

    Add the margarine and yellow mustard. Whisk until blended.

Tips & Warnings
  • This recipe can be cut in half.
  • The sauce will thicken more as it cools, but will thin a bit when heated.
  • Nutritional yeast should be a staple in every vegans pantry. It is a great source of vitamins and nutrition.
  • Most children love nutritional yeast, especially if you call it ‘shaky cheese’.
  • Nutritional yeast is cheaper when purchased in bulk. Often, it can be found online for less money than at your local health food store.
  • Nutritional yeast comes in both flakes and powder. The flakes are the most versatile and have the best flavor.
