Things You'll Need:
- 1 package of semi-sweet chocolate squares (8 squares)
- 1/4 teaspoon of peppermint extract
- 35 Ritz crackers

Step 1
Microwave chocolate in a small bowl according to package instructions. Stir until chocolate is completely melted.

Step 2
Blend the peppermint extract into the melted chocolate.

Step 3
Dip the Ritz crackers into the melted chocolate. Make sure the crackers are completely coated.

Step 4
Place chocolate coated crackers on cookie sheets covered with wax paper.

Step 5
Refrigerate cookies for an hour.

on 3/14/2008 Well I have made them, haven't tried them yet, they are in the fridge as I type--will let you know how they turn out. By the way, I was a Girl Scout for 10 yrs and have also been a leader, so I KNOW what Thin Mints (my favorite) taste like :)~
