Difficulty: Moderately Easy
Things You’ll Need:
- Bacon
- 1-2 lb Ground Beef
- Bread crumbs
- 1-2 eggs
- Onion powder
- Garlic Powder
- Toothpicks
- Baking sheet, Broiler pan or Grill
Step1
One pound ground beef will make 3 'Filets'.
Step3
Mix ground beef with 1/2 cup bread crumbs to every pound.
Step4
Mix in 1 to 2 teaspoons, each, garlic and onion powder to each pound of beef (to taste).
Step5
Form into Fat, square edged patties.
Step6
You will need two slices of bacon per patty. Take the first piece and wrap it around the side edge of the patty, then add the second slice on the other side and wrap the same way, but in the opposite direction.
Step7
Tack the edges of the bacon to the patty with toothpicks; the easy way to do this is to twist the toothpick in while pushing slightly and it will slide right in without changing the shape of the patties.
Step8
You can broil these on a cookie sheet or broiler pan. Watch the bacon until it is crisp and the beef is at least 160 degrees.
If you are using fresh, organic, no hormone, free range beef then rare is fine (even encouraged). Rare would be 140-145 degrees. Same rule applies for grilling!

on 3/12/2008 And I quote (under Tips & Warnings....RIGHT above your comment!):
There always has been some risk associated with eating raw shellfish, or any uncooked meat or eggs. Public health authorities advise that individuals with impaired immune systems or related health problems cook their shellfish, meat and eggs thoroughly to minimize risks.

on 3/4/2008 Any ground meat product should be cooked to a minimum temperature of 160 degrees. Using "fresh, organic, no hormone, free range beef" does not change this.
