Looking for an easy summer salad with a slightly different taste? Apples and onions give this dish sweetness and crunch, while the curry gives some zip to the pasta and peas. Best of all? It only takes fifteen minutes to make.

Instructions

Difficulty: Easy

Things You’ll Need:

  • 1 ½ c. frozen peas, slightly thawed
  • ½ c. sweet pickle relish
  • ½ onion (finely chopped)
  • 3 hard boiled eggs (chopped in small pieces)
  • ¾ c. mayonnaise
  • 2 tablespoons curry powder
  • ½ Macintosh apple, chopped in small, square pieces
  • 8 oz. tortellini pasta with cheese
  • salt and pepper to taste
Step1
Place tortellini pasta in water in a 2-quart saucepan. Boil ten minutes or until tender. Drain.
Step2
Place peas in medium bowl. Stir in pickle relish, onion, and eggs, being careful not to smash the peas.
Step3
Mix curry powder into mayonnaise and stir into the peas. Stir in pasta, and gently mix under combined. Add salt and pepper to taste.
Step4
Chill for at least fifteen minutes. Place in bowl when ready to serve, and toss.

on 11/8/2007 Thanks - I whipped this up quickly when we were invited to an impromptu Labor Day get-together. It's not something you eat everyday, but it provides a nice change to the regular old pasta salads.
