How to Make Baked Nut Loaf as a Turkey Substitute for Holidays!

This hearty vegetarian standard takes the place of roast turkey. Some might call it "Vegetarian Meatloaf". Add a favorite sauce, I suggest mushroom, and all your vegetarian friends will be happy.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • Onion
  • Celery
  • Carrots
  • Oil
  • Nuts: Walnut and Cashews
  • Cottage Cheese
  • Salt
  • Italian Bread Crumbs
  • Eggs
  • Poultry Seasoning
  • Onion Powder
Step1
Preheat oven to 375º
In a skillet sauté 1/2 cup of chopped onions, 1/2 cup diced carrots, and 1/2 cup diced celery in 1 tablespoon of oil.
Step2
Mix the following together in a big bowl:
1 cup of finely chopped nuts (cashews and walnuts mixed)
1 cup of cottage cheese
1/2 teaspoon salt and 1/2 teaspoon pepper
1 cup of Italian bread crumbs
2 eggs beaten
1/2 teaspoon poultry seasoning
1 teaspoon onion powder
2/3 cup of water
Step3
Add the sautéed onion, celery and carrots mixing everything together thoroughly.
Step4
Put all ingredients into a greased 11 3/4 x 7 1/2 baking dish.
Bake until just firm and slightly brown on top, about 35 to 40 minutes.

Tips & Warnings

  • Serve with your favorite sauce or gravy mushroom, tomato or onion gravy works well.
  • You may substitute white wine for water.
