Difficulty: Moderately Easy
Things You’ll Need:
- 2 pounds lean sirloin tip (look for an extra lean cut with very little marbling in the meat)
- 1 tablespoon olive oil
- 4 medium carrots, sliced
- 1 large onion, chopped
- 4 medium potatoes quartered
- 2 celery stalks, sliced
- 2 cups small mushrooms
- 1 teaspoon dried thyme
- 1 teaspoon ground mustard
- 1/2 cup water
- 1 cup dry red wine
- salt & pepper to taste
- 4 tablespoons all-purpose flour
- 1 Basil leaf
- 1 package frozed sweet peas
- 2 cans beef broth
- parsley
- oregano
Step1
Trim all excess fat from beef and cut into cubes
Step2
Heat olive oil in a large soup pot over medium-high heat until hot
Step3
Sauté onions till tender
Step4
Add beef and quickly brown on all sides
Step5
Remove from pot, add potatoes and do the same.
Step6
When potatoes are finished browning on all sides, put beef back in pot and add remaining ingredients except for water & flour
Step7
Reduce heat, simmer approximately 1 hour or until beef is cooked and vegetables are tender
Step8
Combine 1 cup cold water with flour in a glass
Step9
Mix with fork or whisk and add to stew
Step10
Continue heating another 10-15 minutes or until thickened.
