Line baking sheet with tin foil and fill with 1/4 inch of water.

Cut the squash into quarters and clean out the seeds with a spoon or an ice cream scoop. Note: cutting a squash can be hard and dangerous. Get someone to help you hold the squash or place the squash on top of a kitchen towel to stabilize it. Use a sharp knife.

Place squash onto baking sheet with the rinds facing upward. Cook the squash until you can pierce through the rind with a fork. This will vary depending on the squash from 20-30 minutes.

Remove the squash from the oven and let it cool. When it is cool enough to handle puree the squash in a food processor.

Shh! No one will know that the delicious pumpkin pie is made from squash.
You can freeze your pureed squash or use it in place of pumpkin in pumpkin pie, pumpkin bars, pumpkin bread. Anything. No one will know the difference!
Tips & Warnings
Some recipes call for pie-ready pumpkin. To use your squash in these recipes, mix three cups of squash to one cup of brown sugar and one tsp of cinnamon.
