How to make peanut butter cookies without flour

Flourless peanut butter cookies! They're so yummy and simple to make. I took the original recipe I'd found and adjusted it. It fluffs up really nicely now. This is a great after school snack, and the kids will love to help.

Difficulty: Easy
Instructions

Things You'll Need:

  • 1 c creamy peanut butter
  • 1 c sugar
  • 1 egg
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • a pinch of salt
  • 1/2 tsp vanilla
  1. Step 1

    Grease your cookie sheets, or put silicon mats on them.

  2. Step 2

    Stir the peanut butter and sugar together until smooth and well combined. Beat in egg. Stir in baking soda, baking powder, salt and vanilla. Refrigerate for thirty minutes, then preheat the oven to 350 degrees.

  3. Step 3

    Roll dough into one inch balls and place about two inches apart on the prepared cookie sheets. Use a fork to press the cookies with a crisscross pattern.

  4. Step 4

    Bake 8-10 minutes. Let them cool on the cookie sheet 5 minutes, then remove to wire racks to cool.
