Breath deeply...no that isn't pumpkin bread or pumpkin pie, it's a cookie! If you are a lover of anything pumpkin you must try this cookie. The perfect treat for a school Halloween party, try it!

Instructions

Things You'll Need:

  • Cookie sheet & spatual
  • mixing bowl & wisk or large spoon
  • measuring cups & spoons
  • 2 C. pumpkin
  • 2 C. sugar
  • 1 C. veg. oil
  • 2 large eggs
  • 4 C. flour
  • 4 tsp. baking powder
  • 2 tsp. cinnamon
  • 1 tsp. baking soda
  • 2 tsp. milk
  • 2 c. butterscotch chips (optional)
  • 1 c. chopped nuts
  • 2 tsp. vanilla
  1. Step 1
     

    Preheat oven to 375 and grease cookie sheet, set aside.

    COMBINE: in a mixing bowl; sugar, oil and eggs and mix well.
    In a measuring cup mix the baking soda and milk, stir and set aside.

  2. Step 2
     

    COMBINE: dry ingredients to the pumpkin mixture, stir well. Now take the baking soda mixture that was set aside and add into the cookie batter. Mix well.

  3. Step 3

    FINALLY: stir in chips (optional), vanilla, and nuts. Mix well.

    Drop by teaspoon onto greased cookie sheet. Bake at 375 for 10 - 12 minutes. Makes 5-7 dozen.

Tips & Warnings
  • Not sure you would like the butterscotch chips? Try adding some to just a few cookies in your first batch and give them a try!
  • Try drizzling cream cheese frosting over the cookies when they are completely cool...so good!
  • If you love nuts like me, go ahead and add a bit more than the recipe calls for. You won't regret it!
