How to Make Sofrito Sauce

In Spain, sofrito sauce is a typical accompaniment to the Torilla Espanola. Sofrito is widely eaten within Latin American and Hispanic cultures and has many different incarnations. This is only one of them.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 2 Cloves of Garlic, finely chopped
  • Half of a Medium Green Pepper, chopped into small pieces
  • Half of a Medium Red Bell Pepper, chopped into small pieces
  • Half of an Onion, chopped into small pieces
  • One Medium Tomato, chopped into small pieces
  • Olive Oil
  • Salt to taste
  • Optional: Jalapeno or Habernero Pepper
  • Medium Frying Pan

Step1
Pour a small amount of olive oil into the pan over a medium-low flame.
Step2
Add the peppers and garlic. Sauté for 10 minutes, stirring occasionally.
Step3
Add the onion and sauté for another 5 minutes, stirring occasionally.
Step4
Add the tomato and salt to taste, and cook for another 20 minutes, stirring occasionally.
Step5
When the peppers are soft and there is a bit of tomato ‘juice’ at the bottom of the pan, you know it is ready.
Step6
Serve immediately on top of Tortilla Espanola, Bocadilla de Tortilla Espanola or with rice and beans.
