Difficulty: Moderately Easy
Things You’ll Need:
- 1 1lb. bag of frozen, cooked shrimp (with the tails removed)
- 1 lemon
- 2 Tbls. butter or margerine
- 1 sweet onion, chopped
- 1 red pepper
- 1 green pepper
- 12 oz. frozen broccoli florets
- 1 10x14x4 inch disposable aluminum pan
- salt and pepper if desired
Step1
Melt butter or margarine in a small pan. Add the chopped onion. Cook over medium heat until the onions are clear, stirring constantly. Remove from heat.
Step2
Rinse the frozen shrimp in a colander to thaw it, then pour it into the aluminum pan. Spread it evenly.
Step3
Squeeze the lemon over the shrimp.
Step4
Spread the onions and butter or margarine over the shrimp.
Step5
Thinly slice the peppers. Rinse the broccoli in a colander to thaw it.
Step6
Layer the peppers and broccoli over the shrimp. If desired, salt and pepper to taste. Cover the pan with aluminum foil.
Step7
Place the pan on a grill at least 3 inches above hot coals. Cover the grill for 10 minutes.
Step8
Open the grill cover and remove the foil from the pan. Replace the grill cover for 3 minutes. This will give the dish a smoky grilled flavor. It's great served with warm bread and salad.
Serves four people.

on 11/16/2007 Sounds delicious! Can't wait to try it, but I think I'll use fresh broccoli....nothing like fresh veggies!
