This is a fun recipe to make if you and your family are hungry but short of money. It's also a healthy alternative.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 4 eggs
  • 1 6 1/2-ounce can tuna, rinsed, drained and flaked
  • 1 cup bean sprouts, rinsed and drained
  • 1/4 cup chopped water chestnuts
  • 3 green onions (white part only), chopped
  • 3 tablespoons finely chopped celery
  • 2 tablespoons slivered almonds
  • Soy Sauce
  • Salt and freshly ground pepper
  • 2 to 3 tablespoons peanut oil
  • Freshly steamed rice
  1. Step 1
     

    Beat eggs to blend in medium bowl.

  2. Step 2

    Add tuna, bean sprouts, water chestnuts, green onion and celery and mix well.

  3. Step 3

    Blend in almonds.

  4. Step 4
     

    Season with soy sauce, salt and pepper.

  5. Step 5

    Heat 2 tablespoons oil in heavy skillet over medium heat.

  6. Step 6
     

    Drop mixture into skillet by heaping tablespoon, patting gently to flatten.

  7. Step 7

    Fry until golden, turning once and adding more oil to skillet if necessary.

  8. Step 8
     

    Serve with rice and additional soy sauce.

Tips & Warnings
  • You might want to make more than 4 servings, as ingredients spoil quickly.
