There is nothing quite so rustic as baked fish Provencal style! The whole fish is blanketed in a fragrant salt mixture that creates a enclave of steam. This is not your average American entree but more for the sophisticated or European guest - try this as a special treat! Does this Spark an idea?

Things You'll Need

  • 2 - 3 pound talapia whole, cleaned
  • 3 pounds kosher salt
  • 1/4 cup chopped rosemary
  • 1/4 cup lavendar flowers
  • 1/8 rep peppercorns
  • 2 egg whites

Instructions

      Beat egg whites until frothy

    • 2

      Add salt and herbs and mix thoroughly. Mixture will be crumbly.

      Pack the salt mixture onto a baking dish making a layer of salt about 1/2 inch thick. Place the fish on top and encase the top and sides of the fish in the salt and herb mixture.

      Bake at 400 degrees for about 1 hour. The salt should have turned a golden brown and should be quite hard. Serve as is for a fun presentation or remove the salt crust carefully in the kitchen.

      A simple side of white rice and a salad makes a beautiful meal!
